Cookbook Editor, Copy Writer, Website Manager

I was hired by Chef John Folse and Company in 2003 to assist in the creation of his most ambitious cookbook to date, The Encyclopedia of Cajun and Creole Cuisine.

After researching and archiving old recipes, I assisted Chef Folse with the selection and order of all dishes to be included in the book. I also created a guide for recipe standardization that all other employees were to use in future editing and recipe writing.

I served as lead editor of the book, which was published in 2004.
